Highly stressed slaves can injure themselves and get into trouble.
Dream knocks the slave out for the rest of the day, preventing them getting into such trouble as well as lowering Stress.

I don't think quicksell has any options for selecting which slaves to sell. I never use it myself anyway.
A big jail is always the way to go, since taming slaves increases their value and is necessary for upgrade points.
Value of a slave depends on several factors such as level, rarity of the race, traits and beauty. With experience you can recognize slaves likely to to be valuable, but there is no function in game that tells you this other than trying to sell them on the market. There may be a mod for it, but I don't know for certain.
The best places to go for high priced slaves would be goblin cave in the mountains, the elf patrols near the elf town and the monster girls on the beach.
The last one has the advantage of being feral monster girls, so you don't have to tame them to get upgrade points when you sell them.

You seem to get the stats pretty well.

Melee damage and carrying capacity.
It's unimportant on your main, useful on everyone else as it increases the amount of loot your party can haul.
>AGI
Hit chance and chance to get hit. You will still need armor but it helps, until the dragonlands onward, by then you will get hit a ton no matter how much AGI you got so you will need armor to survive, but that's post campaign shit, so don't sweat that early on.
>MAG
Determines how much you heal, sedate, damage and such with your spells. Important on your main, since his MAG will be used for most magic. Also useful on the rest of your party by the time you get to the dragonlands as a MAG 10 magic user can do 120-200 damage per spell. You won't need that until the dragonlands though, so again, don't sweat it during the campaign.

Determines HP and the number of interactions per day, at a rate of 1 to 2, as you noted yourself.
Don't sweat the HP, you get 5 per levelup, so you won't be too squishy once you get a few levels and armor helps reduce damage as well.

The bonuses you can give are +2 STR and/or AGI from modifications, +2 MAG from tatoos, trait bonuses and what you can find on magic equipment.
For early campaigns, you can use anyone who can fight. High AGI will help on all melee fighters and STR 4 or higher for using 2 handed weapons. Races to look out for are Half/Beastkin Wolves and Cats, Centaurs, Arachna's, Scylla's, Lamiah's and Drow's. Fairies too, if you can find one with Responsive. Dragons are the best over all, but are next to impossible to find outside ordering them from Sebastian.
For Dragonlands, you want to max out MAG on everyone in your party for for damage output, get Mindblast, Acid Spit and maybe heal on everyone. Drow and Fairies have the highest MAG max, if you can find them with Responsive, all the better.
