There's a lot of people that complain that after a certain version of the game, the map generation was downgraded and resulted boring. Anybody knows which is it?

I'm not sure what you mean, I think the map generation can vary a lot, later versions have more stuff and more unique biomes
First the height limit was increased, then in later versions the map is actually generating taller mountains and stuff (depending on biomes)

Before the 1.8 adventure update was better for sure but I can't remember the specific version number. 1.8 was also when it became clear they didn't know what the fuck they were doing with the game.

I'm not liking what I've seen so far of 1.15 update
Most players today don't even remember what 1.8 was even like if they even played it
I've played the game since alpha, the leaves didn't even disappear at that point
Sure a lot of things have been added which I don't like but I think overall the game is better with the last few updates

I haven't played for years but some of the additions look really fun for sure (like new biomes, bees, horses, more dyes etc,). I think the game just moved in a direction away from what I wanted. I never really wanted to explore, I just wanted to build up a comfy homestead with a farm and foundry. I wanted stuff like windmills, butter churns, grain silos, apiaries, metalworking, seasons etc. and it never came.

Well, there are mods and modpacks for that, some of the things you mentioned I've seen in those mods/modpacks
Its pretty easy to install modpacks nowadays, just download a launcher and select the mod/modpack and you're in (launchers vary, some need additional accounts like twitch launcher) AT Launcher was pretty good

In other news, I've found minetest's world generation to be pretty neat.

I think Forestry is one of the better farming centered mods at least out of the mods I've played

Immersive engineering is also a really good mod if you like machinery, waterwheels and windmills

I remember playing on an /x/ server at some point, some of the /x/ anons created maps which had spooky places, mysteries and puzzles in them

I played some mod in which special creepers exploded really big, enough to disappear my rudamentary house

TNT cannons can be built in vanilla minecraft, they can be used to shoot TNT to blow up stuff at a range
I've been looking for a new server to play on, the minecraft servers I've been on all seem pretty dead now (as in no players on for hours or days)

I've never actually played minetest, so I'm not sure how it works but making a minecraft server is variably difficult

I remember people talking about the worldgen becoming too realistic and thus too flat. Iirc the update where they removed the detailed world edit sliders was the end of the "surreal" worldgen. Even if you didnt like the "more realistic" worldgen you could still play with the sliders and make floating islands and giant mountians with parts of em chomped off and the like

1.13 was very disappointing for me. The shipwrecks were pitiful, i dont remember anything about the pufferfish dungeon thing, and whats the point of the drowned being a special water enemy if they can come onto land or near it and spam aimbot tridents at you.they're just a more annoying skeleton thats underwater. 
They ruined the block textures in 1.14. I dont understand how anyone can look at that blurry mess and call it ok. I heard the villager update was pretty bad too. Im surprised they didnt go down the "lets make some community mods official" route. Guess thats the incompentence that comes from the masses that attend compsi or game dev school

I haven't really delved into mods, but i was thinking of putting a 1.12 collection together, or a 1.7.10 one (not sure what the major changes between 1.7 and 1.8 are, but I remember some anons saying that 1.7 was better, so i might as well). 
Only mod i remember was messing with tekkit a long time ago. The pipes were fun to play with. Right shame they force you to use their launcher for their mods now.

FTB Infinity or FTB Unleashed had blood moon in it, like in Terraria everything got red and heaps of monsters spawned, it happened at random, sometimes every other night

We've been running a modded minecraft server, using Direwolf20 modpack for minecraft version 1.12.2
Twitch launcher makes it really easy to install but it can be installed without it

Beta 1.7, a lot of complaints were made for the additions of hunger and changing of world generation that removed the wacky looking huge mountains & floating islands. There was also another huge world generation change in Release 1.2 but I don't remember what it did.
Similarly, after Release 1.8 they shat all over the combat system as well which caused a lot of controversy too.

Version 1.12.2 of minecraft
Its the one that most mods run on now
This is a custom modpack with some 120 mods, the city visible in the screen is from "lost cities" mod
We also have Aliens vs Predator mod and Galacticraft in this modpack
For the latest version of minecraft (which I think is like 1.16.4 or so)  There are some intriguing mods that only seem to work for that or recently released minecraft versions, like a mod called "create" and "minecolonies"
